"OMS" refers to the Orbital Maneuvering System. It's the system of directional jets that allows the shuttle to change/correct/maintain its orbit. The three main engines are only used to get the shuttle out of the earth's atmosphere. Once it is in orbit, only relatively tiny nudges are required to push the shuttle to different altitudes and speeds. This is where the OMS comes into play. There are two large jets on the rear (above and to either side of the main engines), and then there are smaller multi-directional thruster jets (called Reaction Control Systems or RCS - you hear Tom Hanks referring to the RCS in Apollo 13) near the OM jets and on the top and each side of the nose.
