I'm not going to word it as well as posts I have seen here in the past, but it was along the lines of: the cap symbolizes her religion/culture, and she is putting it off to the side before she goes out to meet up with Book and act on their passions. It shows she is making a very conscious decision.
My own similar take is: think of the expression to "let your hair down" which means to act free of inhibitions. She didn't actually let her hair down, but taking the cap off frees her hair. And in practical terms, it's hard to imagine making passionate love with that prim cap on.
