The Countess wanted a virgin and chose Jim Carey, why didn't she just go after his two dorky friends, surely they were virgins too??

lol @ dorky friends. did it require her to get blood 3 times from the same virgin? maybe that's why. & nobody wanted them Mark had a gf, they other 2 dorks were easy prey. lol

The Countess was mildly attracted to him. Maybe she wanted a bit of a challenge, and some fun as well. The vampiress did have a huge ego.
