Why didn't she go with John? Why, WHY?

She hasn't lived in his environment, whereas he has lived in both and found hers wanting. They both knew she wouldn't survive in the jungle. She's not stupid. She's a realist and this movie ain't no comic book adventure - romance.

How would she survive there? I doubt I can survive there, let alone her!

John was going back to the jungle and teach English to the apes. She would have been out of element and would not have been happy
