In my opinion, they didn't know if they were going to (successfully) double-cross (or even try...) Tony before the meeting took place.
If they didn't have an opportunity to surprise Tony and his crew, they would have just gone along with the deal and tried again next time, with other and less vigilant people, but they saw their opportunity and took it.
In other words, without the yeyo, their "bluff" would have been too obvious and they would have been forced to kill Tony and his crew no matter what.
Here's a personal and somewhat related anecdote...
When I was a teen, a friend of my was a small-time weed dealer. One day, two guys in a car drove up to us and asked him for a dime bag of weed. My friend leaned in their car and saw the driver getting ready to give him the money he held in his hand, so everything was looking like any other transaction my friend had made, but as soon as he gave the dime bag to the guy in the passenger seat, they slammed on the gas and tried to drive away (for $10, seriously...), but my friend who was leaning halfway into the car managed to hold onto the door frame and proceeded to repeatedly kick the passenger-seat guy in the face before he jumped from the car as it was picking up speed, fast. In the end, the guy in the passenger seat took a beating just so he and his pal could steal $10 from my friend.
Long story short, if my friend hadn't seen the money, he wouldn't have let his guard down so easily and handed the bag over like he did.
It gave the guys an opportunity to try and rip him off, something they probably wouldn't have tried, had the deal gone down differently, but also something they seemed to have planned for before it happened. For instance, there were 2 of them and 4 of us, so if they had stepped out of the car, they obviously never would have tried anything funny. However, no one on our side expected this kind of BS to go down over a dime bag, so we let our guard down and gave them an opportunity to rip my friend off...
