I'm not really sure how it works either, but he didn't store the ice. We saw Chollo grinding the machine, at one point, that makes the ice, and then that fresh ice was given to the natives.

When a large amount of ice is stored there is a large mass of ice at sub-zero temperature and a relatively small surface area. In the 19th century ice was stored in underground "wells" throughout the summer with no form of refrigeration.

Early on, he showed a machine that used 2 ingredients to make the ice. I gather that he took the machine and the chemicals with him.
Actually, getting the boat up the mountain was a fantastic engineering feat. We don't appreciate that in our CGI world.
