I am always happy to make excuses for Star Trek (TOS is MY Star Trek) because I view it as science fiction. Star Wars is (untll Andor?) science fantasy and I care a lot less about it making sense because it wasn't written to make sense.
I think Han was exaggerating. There was obviously some life on Hoth, though it may have been scarce. Probably similar to what we have near the Artic or on Antartica.
I always figured taun tauns were native to Hoth, and Rebellion was able to domesticate and train them to be ridden on.
Obviously he was exaggerating, as it took several space cruisers to evacuate the Rebellion.

I imagine the snow monster Luke got captured by probably fed on the Taun Tauns. There also seems to be the skeletons of other animals in its cave.
