When Magnum starts to talk again for the first time after his coma, he somehow repeats that to answer Mac about time as he thinks Mac is still around....Higgins asks if someone understands what he said and Rick says it has no meaning at all....

Hmmm...I always thought of it as two ends of a spectrum. Infinity is the epic, the profound, the ultimate, unknowable truth of the universe that many 'seekers' are seeking. Whereas jelly donuts are the guilty-pleasure indulgence of everyday, mundane life.
So the phrase "infinity & jelly donuts" encompasses everything under the sun, from the most profound to the most mundane.
It's a way of saying, We can never really comprehend how the universe actually works. It's like the famous quote from Hamlet:
"There are more things in heaven and earth, Horatio,
Than are dreamt of in your philosophy."
