The Winchester Club
Did they just build a set for the Winchester scenes or was it an actual bar?

on the site called minder.org it says in series one they used a real club called the Eton Club in Chalk fArm, for inside and outside locations. But because it was a long way from the studios it became inconvenient, so from series 2 them built a studio set for the inside scenes, and for outside scenes they used a place in portland Road, Notting Hill.
shareThe inside of the Winchester (the one where there was a long swooping staircase that came down to the bar) is located in Enfield /Hertfordshire.
Someone I know used to live there, it was a residential flat/apartment.
