I believe that was arranged by Wonka, to cool people's greed. Therefore, the fifth finder would be someone who just genuinely wanted the chocolate.

Also, why so many adults wanting it? Do they think they'll learn big trade secrets?

Mostly to indulge their spoiled progeny - the recurring theme of this film, but also because when there's a worldwide fervor to find something, everybody wants to find it even if they ultimately don't have much real use for it.
