It's a film about adults, for adults, made by adults. Its pace is just fine.

As a fast and the furious franchise fan, I thought Bullitt was terrifically paced. Intense film, understandably a classic.

I found it difficult getting through this movie. Loss of concentration led to getting lost in the plot. The muscle car chase scene was good though. Most of the other scenes are drawn out, but so too was his other movie Le Mans (1971) with its dreamy women and fast cars, which I better preferred. If you want an action movie from the same era, go with Dirty Harry (1971), although released a few years later.

The first time I watched it some years back, I'd only just become a Steve McQueen fan and I loved the car chase but found a lot of the film boring. It's much slower paced than even a lot of films from the same period. McQueen wanted authenticity - the real sense of police work, doctors and nurses doing their job etc.

Now I've grown to really like the slow pace of it. It feels unique and sets it apart from other films of it's kind.
