I believe Ed's car in the older shows was a Ford Galaxie 500, later he switched to a Ford LTD. Both of these were in a lot of cop shows as unmarked cars in the late 60's early 70's. Some other classics were the 60's models AMC Matador (Adam-12), Dodge Polara, and Plymouth Fury. The LTD has also been used as a marked car since the early 70's right up to today's off-shoot, the Crown Victoria (Crown Vic). Probably the most widely used police car in the US. There's a start, anyway.

I see now that someone else has provided the basic info you were after. However, in case you're interested in some of the details: Ed drove a brand new black 1967 Ford Galaxie, unmarked police special, four-door sedan during the series' Fall - Winter 1967/Winter - Spring 1968 season which was used in several pieces of daytime and night time stock footage filmed on location at the decommissioned Old San Francisco Hall Of Justice Building just prior to the demolition of that magnificent structure. Then he was assigned a brand new '68 version of the same exact model for the Fall - Winter 1968/Winter - Spring 1969 season. During that time, to get more mileage out of the stock footage of Galloway driving the '67 unit into and out of the Old Hall's north side basement parking/drill hall entrance/exit cleaver editing was employed to subtly intercut it with new footage of him driving the '68 unit.
As to the make of cars in general that were used in the series: during the first two seasons various Ford models --whether new or used were frequently employed with exceptions where necessary. Later on during the early 70's new General Motors vehicles predominated.
