Because Nicole and Bonnet say things infront of him that would definitely tip him off if he didn't know.

Nicole and her father certainly spent a lot of time talking about his forgeries where the butler might easily overhear them!
shareI think butlers would never try to listen into other conversations deliberately but if it had to do with possible crimes I think they would do something about it.
They would need proof also which would be easy enough because they live there!
I would think that they guy liked the people enough to work for them and liked his job enough to not want to lose it. he'd never be hired again if he was caught snitching on his employer's private life
shareI think he knew all about it. Remember, seconds after the museum's director leaves after the theft, Bonnet says "Marcel, champagne!" to celebrate. Not something you would normally do if a priceless masterpiece has been stolen from you.
I even suppose he knew about the secret entrance to Bonnet's workshop in the attic. It's not easy to hide, even in your own house, from someone who knows every corner.

I love it that the household staff and butler were so loyal to Bonnet they turned a blind eye, but realistically he would be in serious trouble if just one disgruntled employee decided to expose him.
shareI don't think papa Bonnet, nor his daughter were very demanding towards their personnel (were there others beside the butler?), and he probably was generous pay-wise as well. What more do you need to get a loyal butler?
