I've often wondered what would happen if for some nutty reason Dan Briggs or Jim Phelps decided to turn down the assignment.

We wouldn't see it. If Briggs or Phelps decided that their team wasn't right for the mission, it would likely be handled another way, or not at all.

You're absolutely right. If they didn't accept the mission then it would be a very short episode. It was one of those questions that one has while staying up all night because one decided to have a Steven Hill season one memorial marathon.
There are worse reasons to stay up all night...especially since that season contains "The Traitor", my favorite episode of the bunch.

Zubrovnik's Ghost is one of my favorites, but largely because Beatrice Straight is one of my favorite character actresses. She won an Oscar for this scene alone:

I had to look up The Legend to remember it--I'm of two minds about it. I can't see how Rudd could have maintained the fiction that Bormann was alive for so long--and I also can't see how Rollin could have pulled off the impersonation he does. But Rudd is nice to look at (a necessity in an episode without Willie), and Bain in particular gives a superb performance.
What are some of your favorites?
UNLESS they wanted to do a pilot for a spinoff: MI2, they only do the missions that are too tough for the original MI team!
They actually did at least one "what if?" episode where the mission failed before the first commercial break and the rest of the episode was rescuing Phelps.

One of my favorite things to do when I watch that episode is to count many different outfits Cinnamon wears in 6 days (according to the episode). I usually lose count after 14.
