Wikipedia: "It is generally seen today in the Italian language version, in which Lancaster's lines are dubbed into Italian by Corrado Gaipa; however, an English dubbed version was also produced at the time, in which Lancaster's own voice is heard."

I don't think the cast all spoke the same language during shooting. Most probably spoke Italian; Lancaster English.

The standard practice in Italian movies of the time was to shoot completely silent. Partly for reasons of cost (most Italian movies were made on the cheap), partly because most of them had international casts who wouldn't be speaking the same language anyway. Even Italian movies available in Italian were most likely dubbed.

As the gentleman above notes, Lancaster himself definitely wasn't speaking Italian. Judging from my general knowledge, Lancaster would receive a rough English translation of the Italian script to read on set and say his dialogue in English. The Italian actors would speak their lines in Italian (or French, in Alain Delon's case). No actual interaction as such between actors sharing a scene. It would up to post-synch to make sure words matched up in dubbing to various languages.
