It was a nifty bit of ridin' and ropin' at the end of the movie.

Anybody know who he was?

That was Montie Montana. He was a stuntman and a trick roper.

I wondered, too.

It's 2023 and IMDB shows it was Montie Montana. There's a page on him if you're interested... or after all these years, if someone else is.
