But I do remember this piece of dialog:

Governor: What's your name boy?
Smith: Smith.
Warden: Say 'Sir' when you address the governor.
Smith: Sir Smith.
Or something like that. Anyway that's how I remember it. Kinda liked it.
Is it more or less correct?

Yes, that is correct.

But my favourite quote was from the talk he had with the psychologist:



Shrink: What were you thinking, breaking into that bakery?
Smith: Nothing, I was too busy breaking in.

The 'say sir' - 'Sir [own name]' joke has been used by Laurel and Hardy in 1931 already ("Pardon Us") and probably several times since, but it's still a splendid moment in this film :D
