where did they film the scene when they are pulling the horses through the mud and there is that big rock in the backgroud on the mountain? I'd like to go there and see it.

That would be Chimney Rock & Courthouse Mountain as seen from the west side of Owl Creek Pass in Ouray County, Colorado. The final gunfight scene in 1969's True Grit was also filmed there. For How the West Was Won, many of the exterior scenes of the "Wagon Train" sequence were filmed near there too, in and near Ridgeway and also, I believe, in the Gunnison Valley where the river crossing was staged. The indian attack portion was filmed in California in the Alabama Hills section of the Owens Valley.
