Maybe directors or writers like the sound of the name, Bisbee. Or maybe they use a Southern Pacific route map. I think Bisbee is actually the name of the town they are leaving from and they are going to Yuma for trial. I don't remember the whole plot, but the title is, "3:10 to Yuma," after all. Yuma was the location of the Arizona Territorial Prison from 1875 to 1909 when it closed and the new prison opened in Florence, Arizona. Because of the high summer temperatures in Yuma, the territorial prison there was said to be brutal, although the warden was supposedly quite progressive. Bisbee is one of the towns near the Southern Pacific Railroad that connected them to Yuma and points both west and east. It was completed in the early 1880's, mostly by the end of 1881. I suppose that writers and directors like towns with melodic names that are less frequently heard. Tucson and Tombstone pop up so often they are almost cliches, so that may dissuade writers from using them even though there are authentic reasons to use them. Bisbee also qualifies as being a small town that existed mostly to support the Copper Queen copper mine.
