It is perhaps possible in the "director's cut" longer version (I'm not sure that version even exists any more), but if my memory serves then it's not in the 60+ minute version that was released by RKO.
Martin's body is carried (under a sheet) into the trophy room while Bob & Eve is inside, having just discovered the room. We know it's Martin's dead body being returned from the previous night's hunt, as Bob lifts the sheet and recognises Martin, sparking a showdown. Count Zaroff would therefore not have had the time to mount Martin's head on a plaque yet. The head you saw was probably of an earlier shipwreck/hunting victim resembling Martin's head.
Of course I could be wrong, but that's how I remember it.
