With Burton at the helm, I'd have really enjoyed Cage as Superman. I mean, I think. There's no way to be certain. But if they went in and made him this true alien Superman, yeah, it could've been fun. Definitely non-traditional, but you know, sometimes it's fun to read The Dark Knight Returns and get a little Frank Miller psycho-Bats, or dig into some Elseworlds stuff. Burton doing some strange, weird, outsider take on Superman - with Nic Cage creating Kal-El as much as Clark Kent - yeah, could've been great.
It's hard to picture Mikkelson as any superhero, yeah. Even Batman or somebody who is supposed to be a bit terrifying. Because Mikkelson has that Danish accent, I think that contributes to making it hard to picture him as somebody like Captain America who is, necessarily, All-American. Unfortunately, Zatanna is a woman. She could have an accent.
I misread "Christopher Walken" as "Cristoph Waltz" for no reason other than my own brain malfunctioning. Waltz would be awesome. Walken would be strange, yes. But, in a Burton Superman with Cage as the Man of Steel, I'm not sure Luthor would be the best villain. I would think Brainiac, and Christopher Lee or Martin Landau doing the voice. Get stuntmen to do the physicality, at least in action scenes.
The Toyman would've worked, too, as long as he didn't just cast Danny DeVito and do The Penguin Again. Best casting here would've been Paul Reubens.

shareI liked him in Valhalla Rising a lot, and I'm a big Casino Royale fan (although, going on your "haha" to bigbadwolf's comment, I'm thinking maybe you differ with me there). I also really enjoyed him in Flame and Citron, although I don't think that one will alter your "stiffness" assessment.
