He'd do a great job so long as he doesn't bloat the script. But Peter Jackson loves to bloat everything, so the thought of him taking control makes me nervous even though I like his style.
He would need to keep the running time under 2 hours as a goal. I don't mind an extra half hour of scenes for an extended edition though.

I'm wondering if he isn't too big of a name for a Star Wars movie.
After JJ Abrams, who was a selling point and someone who could push the series off, they seem to be going for directors who don't have a huge wealth of experience in these type of large budget films, not saying it's not a possibility, but who's to say PJ is even a fan.
And if you were PJ would you want to beholden to another group of loyal fans, probably more outspoken than LOTR fans, a major corporation, and be just a cog in the wheel, or would you rather develop something yourself and have a studio give you what you need to make the project considering your track record?
I would be a little hesitant with him taking on one to be honest; if we were still riding on the coattails of the LOTR movies, I would agree wholeheartedly that he should do one, but after The Hobbit movies, nah; as others have said, he likes to bloat his movies and I think the success of the original trilogy got to him a bit, unfortunately. I appreciate that he wants to bring us stories like Tin Tin or King Kong and he has appreciation for that stuff, but he has become so commercial now that I don't know if he knows how to make the opposite of what he is doing now.
He can do it, he just has to want to do it right.
