I mean there's really nothing to panzanella except tomatoes and stale crusty bread, and if you want to add a bit of shallot or herbs or other veg, then that can be great, but if you want to just chop some tomatoes and stale bread and add salt, pepper, and olive oil, that can be enough.
The tuna-bean salad can be as simple as a can of tuna (in oil) and a can of white beans, although I like to add a bit of red onion, herbs, and pepper. You don't need salt, with high-sodium canned food.
Anything you personally find refreshing. For me that's green salads, sushi, grilled fish, semi-frozen fizzy drinks, cold grapes, corn on the cob and tomato soup.
